Basic:

Onion (large) 1 pc
Garlic 6 clove
Salt (with a slide) 1 tbsp
Ground black pepper 1 tsp
Water 5 l
Bay leaf (2-3 sheets) 2 pc
Beef (leg with claw weighing about 1.5 kg) 1.5 kg
Fillet of beef 1 kg
Allspice 5 pc

How to cook jellied beef legs? Prepare the necessary ingredients.

Rinse the beef leg thoroughly, dry it and cut it into 2-3 parts. It is easy to cut the hoof in half lengthwise with a regular knife. To divide the leg crosswise, you will need a hatchet.

Place the trimmed leg of beef in a large saucepan and add cold water. The leg should be completely covered with liquid.

Place the pan on the fire and bring the leg to a boil, periodically removing the resulting foam.

When all the foam has gone and the broth becomes clear, reduce the heat to low and cook the leg for another 4 hours under the lid.

Rinse the meat. It is best to use shank meat — it will turn out very soft and tender after long cooking. Place the meat into the pan, next to the leg, in one piece.

Bring the broth to a boil and cook for 30 minutes over medium heat. Then cover the pan with a lid and cook over low heat for another 1.5 hours. At the same time, the broth should not boil too much.

Add the peeled whole onion, bay leaves, allspice and salt. Cook everything together over low heat at a low simmer for 30 minutes.

Depending on your preference, you can roughly chop the garlic cloves in half or finely chop them. I don’t like pieces of garlic in prepared jellied meat, so I cut each clove in half.

Remove the leg, meat and onion from the pan. Strain the broth through a sieve and return to low heat.

Add whole or chopped garlic cloves to the broth.

Divide the boiled meat into fibers with your hands or cut into small pieces.
