Vinegar (9%) 100 ml
Herring 400 g

How to marinate herring with onions and vinegar? Prepare the necessary ingredients for this. Cut off the head of the finished salted herring and take out the insides. Cut it in half lengthwise, remove the backbone, large bones and remove the skin from the fish. You can change the amount of onion slightly to suit your taste. But there must be a sufficient amount of it. Pickled onions are also very tasty.

Cut the cleaned herring fillet into portions. There is no need to cut it very coarsely, 3-5 cm is enough. Place the chopped herring in the bowl in which you will marinate it. Use glassware. It will be easier to clean later. Plastic dishes will smell like onions and fish for a long time.

For pickling, use 9% vinegar. Combine it with water in a ratio of 1:3. Vinegar cannot be replaced with essence! But it can be replaced with grape or apple (it gives a specific aroma).

Peel the onion and rinse in cold running water. Cut the peeled onion into half rings and crush it a little with your hands. This is necessary so that the onion becomes softer and releases juice faster.

Mix the onion and herring and pour a mixture of water and vinegar over everything. For flavor, you can add a few peppercorns and a bay leaf. Marinate the herring for 5-6 hours in the refrigerator.
