Basic:

Garlic 3 clove
Salt to taste
Sugar 1 tbsp
Ground hot pepper to taste
Walnuts 60 g
Bulb onions (Red) 1 pc
Paprika (I have smoked) 1 tsp
Khmeli-suneli 2 tsp
Sunflower oil 5 tbsp
Green cilantro 1 bunch
Canned beans (Red) 400 g
Red wine vinegar 2 tbsp

How to make lobio from canned beans? To begin with, the walnuts, peeled from shell and partitions, must be lightly fried in a dry frying pan (without oil). As soon as the nuts smell and brown, remove them from the heat and let cool slightly. Meanwhile, rinse the cilantro thoroughly in running water and place in a colander to drain all the water.

Peel the red onion and cut into strips about 2 cm long. You can safely use white onions.

Heat 3 tbsp in a frying pan. sunflower oil and add onion to fry. Once it softens a little, add paprika and ground black pepper.

Now you need to drain the canned red beans in a colander. Do not pour out the liquid! We will still need it.

Place the beans in a frying pan to warm up a little and fry for 2-3 minutes over medium heat.

Now add the liquid from the beans to the pan. Simmer the dish for 20-25 minutes, stirring. If the liquid has time to evaporate, add a little boiling water and simmer again. The idea is for the main ingredients to combine their flavors and have time to “love” each other.

Itʼs time to get to the nuts. You can use a blender to grind them. But I like it when the nuts are felt in the dish, and so I just chop them with a knife, but quite finely.

Also chop the cilantro. If you are not a fan of cilantro, you can also use parsley. But, of course, it is cilantro that fits into this dish as if it were native.

In a separate bowl, mix nuts, cilantro, finely grated garlic, 2 tbsp. sunflower oil, red wine vinegar and suneli hops. Add salt to taste.

By this time, almost all the liquid had already evaporated from the beans. Check this way: use a spatula to spread the beans in the middle of the pan and assess the amount of liquid. There should be just a little bit of it left.

You can safely add cilantro with nuts and spices to the frying pan. And now my proprietary secret. At this stage I add 1 tbsp to the lobio. sugar so that the dish acquires another shade of taste.

Mix well and simmer for another couple of minutes. Ready!
