Spicy Eggplant Delight

fast, simple and mind-blowingly delicious. I tried it once and now I will never forget it. It seems simple and quick, but the spicy marinade adds a special twist to this dish. Try cooking eggplants using this recipe and you will understand what Iʼm talking about;)

Ingredients (1 portion)

Basic:

Garlic 1 clove
Salt to taste
Ground black pepper to taste
Lemon juice 3 tsp
Honey 1 tsp
Vegetable oil (you may need more or less) 3 tbsp
Dill (For decoration) 1 tbsp
Eggplant 600 g

Everything is very simple and fast. These are the ingredients we need.

Wash the eggplants, peel them and cut each one lengthwise into 8 pieces. My eggplants were small, so I simply cut them lengthwise. Large and long ones, of course, it’s better to cut them crosswise if you don’t want them to look like spaghetti :)

I put it in a colander, add salt, stir and leave for 20 minutes so that the eggplants release their juice and all the bitterness goes away.

This is the amount of liquid I got! At the end, the eggplants can be lightly squeezed.

Fry in vegetable oil on each side until cooked and place on paper towels to absorb excess fat. At this stage I lightly pepper it.

Letʼs prepare the sauce. I warmed the honey slightly in the microwave to make it easier to work with. I add 3 teaspoons of lemon juice to it, salt to taste.

I squeeze out the garlic. Iʼll try. Everything here is optional. You may want more acid, or vice versa sweetness. Here, as they say, “there are no comrades according to taste and color...” :) you can add more soy sauce, for example!! For me, the proportions I gave were ideal.

I transfer the eggplants to the dish on which I will serve, pour the sauce on top, and sprinkle with herbs. Donʼt worry, the lower layers will marinate well too. And it is advisable to leave for about 20 minutes so that all the flavors combine well with each other. Bon appetit!!
