How to cook compote from apples and oranges? Prepare your food. The number of apples and oranges may vary depending on their size — take more small fruits, less large ones. Also consider your taste preferences. Choose aromatic varieties of apples with a bright taste; they will make a tastier compote. You can also increase or decrease the amount of sugar.

Take a pan suitable for cooking compote. It is better if it is enameled or stainless steel. Do not use aluminum; the metal may oxidize from citrus juice. Pour cold, clean water into it. Place on high heat. While the water is boiling, prepare the fruit. Wash them very thoroughly under running water using soda and a hard sponge to wash off the waxy layer that is often used to prevent spoilage.

Cut the apples into quarters, remove the core and stems. Then cut the quarters into wedges. Remove the zest from the oranges — the top layer of skin — without touching the white layer, which is bitter. It is convenient to do this with a vegetable peeler.

Squeeze the juice out of the oranges. You can do this with a juicer or any available means. If the fruits have seeds, place a strainer on the glass to prevent them from getting into the juice.

Place the chopped apples, zest and sugar into a saucepan of boiling water. Stir and leave the compote to simmer gently over low heat for 10 minutes. Cover the pan with a lid.
