Basic:

Olive oil 3 tbsp
Salt to taste
Mozzarella 250 g
Wheat flour 2 tbsp
Parmesan 80 g
Pumpkin 800 g

How to bake pumpkin with cheese in Italian? Prepare the necessary ingredients. Mozzarella can be used both in brine and the one intended for pizza. I took the first option.

Peel the pre-washed pumpkin and cut into slices no more than 0.5 cm thick.

Place a little flour on a plate with small sides and bread each pumpkin slice on both sides. Add flour as needed.

Place the floured pumpkin slices on a parchment-lined baking sheet. Drizzle each slice with olive oil and add a little salt. Please note that Parmesan has a certain degree of saltiness.

Bake vegetable slices in an oven preheated to 180C for 10 minutes. All the slices didn’t fit on one baking sheet, so I baked them on two.

Remove the mozzarella from the brine and let the liquid drain. Cut the mozzarella into slices and dry thoroughly.

Cover the pan with foil and place in an oven preheated to 180C. Bake the pumpkin and cheese for 20 minutes. Then remove the foil from the pan, switch the oven to grill mode and increase the temperature to 200C. Bake the dish until golden brown, 5-7 minutes.
