Hearty Beef and Onion Stew

Ingredients (6 portions)

Basic:

Beef 800 g
Onion 400 g
Water 250 ml
Tomato paste 50 g
Garlic 6 clove
Olive oil 3 tbsp
Curry 1 tsp
Ground red pepper 1 tsp
Ground hot pepper 1 g
Ground black pepper to taste
Salt to taste

Decoration:

Chilli 0.25 pc
Parsley to taste

How to stew beef with onions? Prepare the necessary ingredients. It is better to use beef without bones, only the pulp. It is better to take small bulbs — the smaller, the better. Shallots or small pearl onions are ideal, but if you can’t get one, then a regular small onion will do.

Wash the beef, dry it with a paper towel, otherwise excess moisture will not allow it to fry — it will stew. Cut into large or medium pieces.

Peel the onion and leave whole.

Peel the garlic and leave the cloves whole. But if you wish, you can finely chop the garlic with a knife.

Heat olive oil in a deep, thick-bottomed frying pan. Place beef in a single layer.

You need to fry the meat over high heat to immediately seal all the juices in the meat. Fry the beef on all sides until golden brown.

Reduce heat to medium, add whole onions and garlic cloves to the meat, add paprika, curry, chili pepper, ground black pepper and salt. Stir and fry everything together for 1 minute.

Add tomato paste to the pan, stir and simmer over low heat for 1-2 minutes.

Pour hot water into the pan and stir until smooth. Bring the sauce to a boil.

At the last minute I added dried paprika flakes to the pan for flavor and aroma. If you have such a seasoning, be sure to add it, it will only turn out tastier.

Simmer everything together over low heat with a low simmer under the lid for about 40 minutes until tender, adding hot water if necessary. The onion should be ready, softened, but not boiled, but remain whole. Place the finished meat on plates, sprinkle with chopped parsley, chopped chili peppers and serve. Bon appetit!
