How to make wild boar with garlic in a frying pan? Prepare all the necessary products. If you have frozen game, you should first defrost it. Read about the intricacies of defrosting in the article at the end of this recipe. You can take any part of the carcass. This time I have a hip. Separate the pulp from the bone and cut into medium-sized pieces. The bones can later be used to prepare broth and cook, for example, borscht or cabbage soup.

Heat a small amount of refined vegetable oil in a frying pan with a thick bottom. Send the boar meat to fry. How to choose the right frying pan and oil for frying, read the separate articles at the end of the recipe.

Cook over high heat, stirring occasionally, until golden brown. Next, pour in a little water (40-50 ml will be enough), after boiling, reduce the flame to minimum and simmer the game under the lid until cooked. How long to simmer meat in a frying pan? It all depends on how young the animal was and what size your pieces of meat are. It took me about 30-40 minutes for the boar meat to become soft.

The older the boar, the longer you will need to cook it. Peel the garlic and rinse the cloves in cold water. If desired, you can use more garlic than stated in the recipe. Open the lid of the pan. If you have a lot of liquid left, evaporate it by turning up the heat on the stove. When there is practically no water left, add juniper berries, peppercorns and garlic, cut into 2-4 parts, to the meat. Salt everything to taste.

Cook over moderate heat, stirring occasionally, for at least 5-10 minutes (until the garlic turns an appetizing golden color). Add a couple of small sprigs of rosemary to the meat. Stirring, cook for another 2-3 minutes.

The most tender boar meat with garlic and rosemary is ready! Serve with mashed potatoes or sauerkraut. If desired, sprinkle the finished game with ground allspice.
