Baked Squid with Tomatoes

Tender, juicy. For an appetizer or as a main dish for the family. Squids with tomatoes stewed in the oven turn out no worse than boiled or fried. Donʼt let the long baking time bother you. The seafood turns out as soft and tender as if it had been cooked for 2 minutes.

Garlic 4 clove
Tomatoes 2 pc
Salt to taste

Breadcrumbs 2 tbsp

How to make squid with tomatoes? Very simple. First, prepare the necessary ingredients. If the squids are frozen, defrost them first, but not completely — frozen squids are easier to clean. I have whole squids, with tails. But you can also buy already prepared, cleaned, frozen tubes without tails. Clean the squid from the skin, internal films, remove the chitinous plate and entrails. Cut the squid carcasses in half. Using a sharp knife, lightly score the squid into diamond shapes, being careful not to cut all the way through.

Wash the tomatoes, peel and cut into slices. How to easily peel tomatoes? Wash them and make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin.

It is important to choose high-quality breadcrumbs. They shouldnʼt be too small. Heavily crushed (almost like flour) crackers may not give a crunchy effect. You can make your own breadcrumbs: dry 3 slices of white bread and grind into crumbs.

Peel the garlic and finely chop it with a knife.

Wash the parsley, dry and chop. If you wish, you can replace or supplement with other herbs, for example, dill, cilantro, green onions, etc.

Place the squid in a baking dish greased with vegetable oil and season with salt and pepper. Sprinkle with half the minced garlic.

Place tomatoes on top. Sprinkle with remaining garlic and breadcrumbs. I couldn’t fit all the squid into the mold in one layer, so I divided the ingredients into two molds. Although you can make it simpler — put everything in one form in layers. Everything will bake well.

Place the pan in an oven preheated to 220℃ and immediately reduce the temperature to 180℃. Bake for about 1 hour.
