Basic:

Onion 2 pc

Wheat flour 300 g
Water (175 ml — for the dough, 50 ml — for the filling) 225 ml

Pork 350 g
Fat tail fat 80 g

First you need to prepare the dough. To do this you need to take a deep container. Pour boiling water into it, add salt and stir. Sift flour into already salted boiling water and knead the dough. Then transfer it to the work surface and continue kneading the dough for another 7-8 minutes. Next, wrap the dough in cling film or put it in a plastic bag and leave the dough to rest for 30-40 minutes.

Now you should prepare the filling itself. Pork, beef and tail fat need to be cut into pieces and passed through a meat grinder. Peel the onion and chop it as finely as possible. Add onion to the minced meat, mix all ingredients.

Next, add a little water, salt and ground black pepper to the minced meat with onions. Mix all filling ingredients thoroughly.

Now you can start sculpting the manti. To do this, take a piece of dough and roll it into a thin layer.

Using a metal mold or, for example, a saucer (thatʼs what I used), cut out circles from the dough. I have a piece of dough with a diameter of 13 cm, as I think this is the ideal size, but you can cut out circles of a different size. For example, I make one manti from a piece of dough with a diameter of 9 cm and you will see a colossal difference between them. As for me, these are no longer manti, but large dumplings.

Place the meat filling in the center of each piece of dough. Next you need to make manta rays.

First, pinch the edges in the middle.

Then pinch the two side edges, connecting them with the previously made tuck in the center.

Now you need to connect the edges together. The first manti is ready. Now all that remains is to mold the rest. Place the molded manti on a thin plastic board without sprinkling it with flour, since it is then very easy to remove the manti from it. If you don’t have such a board, then sprinkle it with flour before laying out the manti.

Then place the board with manti in the freezer.

Grease each section of the steamer with vegetable oil, then place the manti. Cook manti in a double boiler for 45 minutes. Ready-made manti are best served with sour cream, to which you can add chopped garlic if desired.
