Recipe instructions

Step 1

Step 1
How to make chicken nests? Prepare your ingredients. If necessary, defrost the minced meat in advance. Wash cherry tomatoes and herbs thoroughly and dry. Remove the mozzarella from the brine and let it dry.

Step 2

Step 2
Peel the garlic. Finely chop the greens and garlic with a sharp knife. If you donʼt want to bother with garlic, you can use a garlic press.

Step 3

Step 3
Add salt and spices to the minced chicken.

Step 4

Step 4
Knead the minced meat well with your hands until smooth. As you knead, it will become more sticky, as it should be.

Step 5

Step 5
Divide the minced meat into 5 parts and form them into equal balls. To prevent the minced meat from sticking to your hands, moisten them with water.

Step 6

Step 6
Roll each ball in flour and form into cutlets, making a hole in the center of each for the filling. This can be done, for example, with the bottom of a glass.

Step 7

Step 7
Place the nests on a parchment-lined baking sheet. If your minced meat is lean, you can grease the surface of the cutlets with vegetable oil. I didnʼt grease it because there was enough fat in my minced meat.

Step 8

Step 8
Place chopped garlic and chopped basil on the bottom of each nest.

Step 9

Step 9
Place one cherry tomato on top. If you wish, you can first pour boiling water over the tomatoes and remove the skins from them.

Step 10

Step 10
Place two mozzarella balls in the remaining space of the meat nests.

Step 11

Step 11
Sprinkle the top of each cutlet with Italian herbs and paprika.

Step 12

Step 12
Place the baking sheet in an oven preheated to 180ºC for about 40-45 minutes. Determine the exact baking time and temperature based on your oven.
