Sugar 1 tsp
Ground black pepper (or fragrant) 0.5 tsp
Wheat flour 100 g
Milk 200 ml
Eggs 1 pc
Vegetable oil 5 tbsp
Pork 500 g
Greenery to taste

How to fry juicy, soft pork chops in a frying pan? Prepare all the necessary ingredients. Which part of the carcass is best to use for this? The loin is ideal, it is not too fatty and does not contain veins.

Wash a piece of pork under running water, dry it with napkins and cut into portions about one centimeter thick.

Cover a piece of loin with a plastic bag and beat it on both sides. Why is it recommended to cover the meat with film? This is done so that there is no splashing when beating and your kitchen remains as clean as possible after this procedure.

Do the same with all the pieces.

Mix salt and sugar in a small container. In the recipe I used Adyghe salt; it contains some dry spices, which undoubtedly improves the taste of the finished meat. If you wish, you can add your favorite spices.

Brush each piece of loin with a mixture of salt and sugar on both sides.

Transfer the meat to a deep bowl or bowl.

Fill with milk. You can take milk with any percentage of fat content, it doesn’t really matter.

Lightly crush the meat with your hands and leave in milk for about an hour. The pieces will need to be mixed a couple of times during this time. The chops will absorb the milk, making them very tender.

Wash the egg thoroughly in running water and soda, as there may be harmful bacteria on its surface. Pour it into a deep plate and shake with a fork. Add a pinch of salt and ground pepper (I added a little dry meat seasoning myself). Mix everything again.

Heat vegetable oil in a frying pan. Send the chops to fry over medium heat, first on one side (three to four minutes will be enough).
