Recipe instructions

Step 1

Step 1
How to make homemade cutlets in tomato sauce in a frying pan? Prepare your food. Take mixed minced meat, pork and beef. Choose sour cream with 20% fat content. You can replace tomato paste with ketchup or fresh tomatoes.

Step 2

Step 2
First of all, cut off the crust from the bun (for cutlets, it is better to take stale bread — it will better absorb the meat juice and make the cutlets more juicy). Crumble the crumb into a bowl and add a small amount of water or milk. Leave to stand for 10 minutes until the bread softens.

Step 3

Step 3
Peel the onion and grate it on a fine grater — this will also make the cutlets juicier and the sauce more flavorful.

Step 4

Step 4
Squeeze out the wet bread and add to the minced meat. Place a spoonful of sour cream there and beat in an egg. Salt and pepper the minced meat. Knead it very well so that the minced meat becomes homogeneous and dense.

Step 5

Step 5
Form the minced meat into round cutlets.

Step 6

Step 6
How to make sauce for cutlets with tomato paste? Mix water, sour cream, tomato paste and a spoonful of flour in a bowl. Be sure to add a little sugar — it neutralizes the acidity of the tomato paste. Season the sauce with salt and pepper.

Step 7

Step 7
Place a frying pan over medium heat and add frying oil. Breaded cutlets in flour. And place in hot oil. Read about how to choose the perfect frying pan, as well as how to choose the right vegetable oil in separate articles, links at the end of the recipe.

Step 8

Step 8
Fry the cutlets on both sides until golden brown.

Step 9

Step 9
Pour the prepared sauce over the cutlets. Make the fire minimal. Simmer the cutlets in the sauce for 20-25 minutes. The exact time will depend on the size of your cutlets.

Step 10

Step 10
During simmering, the sauce may boil away a little, keep an eye on this and add hot water if necessary.

Step 11

Step 11
Serve the cutlets with any side dish. Bon appetit!
