Cutlets:

Minced meat 500 g
Milk 50 ml
Dill 10 g
Eggs 1 pc
Garlic 1 clove
White bread 5 g
Ground black pepper to taste
Salt to taste

Sauce:

Meat broth 200 ml
Sour cream 200 g
Corn starch 1 tbsp
Ground black pepper to taste

How to make cutlets in sour cream sauce in the oven? To begin, prepare the necessary ingredients according to the list. Choose minced meat according to your taste. It can be minced meat from a certain type of meat, for example, only pork or beef (like mine) or mixed.

Cut the crusts off a slice of white bread, pour milk over the crumb and leave to swell.

Finely chop the dill.

In a bowl, combine minced meat, egg, slice of bread squeezed out of milk, garlic, dill, salt and pepper. If you wish, you can add pre-chopped and finely chopped small onions to the minced meat, fresh or fried in a frying pan.

Stir the minced meat until smooth. If the minced meat turns out too runny, add 1-2 tbsp. l. semolina, mix and leave for 15 minutes for the cereal to swell. The semolina will absorb excess moisture and the minced meat will become more viscous.

With wet hands, form the minced meat into small round patties.

Heat a little vegetable oil in a frying pan and fry the meatballs over medium heat for about 5 minutes until golden brown. Turn the cutlets over to the other side while frying. If you don’t want to waste time on frying or you need a more dietary option, you can put them in a mold raw, pour over the sauce and bake in the oven for about 40-45 minutes. While the cutlets are frying, prepare the sauce. You can use any broth: chicken, meat or vegetable. If you donʼt have broth, you can replace it with plain water.

Dilute starch in 50 ml of cold meat broth so that there are no lumps.

Pour the broth with starch into the sour cream and stir well.

Pour in the remaining meat broth, add salt and pepper to taste and mix well.

My sauce turned out to be quite liquid, but when baked it will become much thicker thanks to the starch. You can adjust the amount of sauce to suit your tastes. If you want the cutlets to be completely covered with sauce, make 1.5 times more. I wanted the sauce to reach about halfway through the cutlets.

Place the meat cutlets in a baking dish greased with vegetable oil.

Pour sour cream sauce into the mold. Place the cutlets in an oven preheated to 180°C and bake for about 20-25 minutes.
