Authentic Pozharsky Chicken and Veal Cutlets

Previously, Pozharsky cutlets were prepared this way in the very city of Torzhok!. Pozharsky cutlets were prepared from a mixture of chicken and veal. Try it, itʼs VERY tasty!!!

Ingredients (8 portions)

Basic:

Salt to taste
Butter (for frying) 50 g
Breadcrumbs 1 cup
Bulb onions 2 pc
Chicken fillet 700 g
Cream 200 ml
White bread 5 g
Veal 500 g

Recipe instructions

Cut the veal and chicken fillet into small pieces, then chop into mince with a sharp knife. Do not use a meat grinder or blender!!!

Dry the slices of white bread in air for about 2 hours. Pour cream over the dried bread and leave for 15 minutes. Knead the soaked bread thoroughly with your hands.

Cut 2/3 of the cold butter into cubes and place in the freezer for 10 minutes.

Cut the onion into cubes and fry over low heat, stirring, for 5 minutes. Remove from heat and let cool slightly.

Add the fried onion along with the oil from the frying pan and the bread along with the liquid to the resulting minced meat. Salt and pepper.

Beat the minced meat on a work surface. Then add frozen butter cubes.

Make cutlets.

Roll the cutlets in breading, place on a plate and refrigerate for 20 minutes.

Then fry in butter over medium heat, turning often, until golden brown. Serve very hot.
