Basic:

Onion 1 pc
Salt to taste
Eggs 1 pc
Zucchini 300 g
Breadcrumbs 0.5 cup
Vegetable oil 50 g
Dry spices to taste
Chicken fillet 400 g
Semolina (can be replaced with flour or starch) 3 tbsp

How to fry chicken cutlets with zucchini? Prepare all the necessary ingredients for this. For chicken meat, I like to use chicken thigh fillets. It is not as dry as breast fillet.

Peel the onion and rinse in cold water. Grind chicken meat and onion. This can be done by passing everything through a meat grinder or using a chopper. Place the minced meat and onions in a spacious bowl in which you can conveniently mix everything.

Wash the zucchini. If it has a hard peel, then it needs to be peeled. Young zucchini can be used with the peel on. Grate the zucchini. For a more uniform consistency, you can use a fine grater. Squeeze out excess liquid from grated zucchini.

Add the squeezed zucchini to the bowl with the minced meat. Then add the egg. Sprinkle everything with a little salt and spices to taste. For spices I use a mixture of ground peppers and paprika. Mix all ingredients well with each other.

Depending on the consistency of the cutlet mass, add 2-4 tablespoons of semolina. It will make the consistency a little thicker and denser. Instead of semolina, you can use starch or flour.

Place breadcrumbs in a small plate. Take some cutlet mixture, roll in breadcrumbs and form cutlets with your hands.

Heat a frying pan until hot and pour in a little vegetable oil. Place the formed cutlets and fry them over low heat for 1-2 minutes on each side.
