Oven-Baked Juicy Rabbit Cutlets

The most tender, appetizing, healthy and delicious! Juicy minced rabbit cutlets are prepared with the addition of milk, butter and breadcrumbs, due to which all the juice from the meat remains inside. Baking them in the oven makes them even healthier and reduces the calorie content of the dish.

Basic:

Salt to taste
Butter 50 g
Milk 60 ml
Eggs 2 pc
Breadcrumbs 2 tbsp
Rabbit (Ground meat) 600 g
Herbal mixture (Dried or fresh rosemary, marjoram and basil) to taste

How to make juicy minced rabbit cutlets? Prepare your food. I used ready-made chilled minced meat from a supplier I trust. But if you prepare the minced meat yourself, I recommend passing the rabbit meat through a fine-hole meat grinder twice. This way, future cutlets will be airy, with a more mousse-like texture.

Pour milk into the bowl with the minced meat (the fattier it is, the more tender the cutlets will be in the end). You can replace milk with 10% fat cream. Add breadcrumbs. Use store-bought or homemade crackers; the latter will taste better.

Wash the eggs and beat them into a bowl with the minced meat. Add dried herbs. I use basil, marjoram and rosemary. You can put your own set or not use herbs at all. Add salt to taste. If you wish, you can add more pepper to the minced meat. Mix all ingredients thoroughly. To speed up the process, you can use an immersion blender.

Melt the butter in any convenient way. Personally, I find it more convenient to heat the butter in a small saucepan over low heat. But you can do this in a microwave oven or in a water bath. Pour the cooled oil into the minced meat and mix everything again.

Using a tablespoon, scoop the minced meat into equal-sized patties. Grease a baking sheet with butter and place the cutlets on it. Bake them in an oven preheated to 200 degrees for half an hour. Instead of baking, you can fry the cutlets in a hot frying pan in vegetable oil for five minutes on each side. Serve the cutlets with mashed potatoes or boiled pasta and always with a salad of fresh vegetables. Bon appetit!
