Recipe instructions

Step 1

Step 1
How to make liver cutlets from pork liver? Prepare your ingredients. You can use any lard you like. I have pork liver, but you can replace it with beef, chicken or turkey. Please note that cooking times may vary. You can use fresh or frozen liver. The frozen product must first be defrosted on the bottom shelf of the refrigerator. Read about all the intricacies of proper defrosting in a separate article, link at the end of the recipe

Step 2

Step 2
Wash the liver, cover it with salted water and leave it for 2 hours so that the bitterness goes away. Then drain the water, rinse the liver again, dry it and remove films, veins and blood clots.

Step 3

Step 3
Cut the liver into large pieces.

Step 4

Step 4
Cut the lard into medium pieces.

Step 5

Step 5
Peel the onion and cut into 4 parts.

Step 6

Step 6
Pass the liver, lard and onions through a meat grinder.

Step 7

Step 7
Add egg, salt and pepper to the resulting minced meat. Mix everything thoroughly. In addition to these spices, you can add your own to taste.

Step 8

Step 8
Add flour and dried garlic and stir until smooth. You should get a thick but flowing dough. Let the dough rest for 5-7 minutes. If the dough is runny, you can add a little more flour. For more information about flour, read the article below the steps.

Step 9

Step 9
Heat some vegetable oil in a frying pan over medium heat. Spoon the dough and form into even round patties.

Step 10

Step 10
Fry on both sides until golden brown, about 3 minutes on each side. There is no need to fry the cutlets too much, otherwise the liver will become tough. How to choose the ideal frying pan and oil for frying, read articles on these topics. Links at the end of the recipe.
