Serbian Grilled Meat Cutlets

Juicy, flavorful, meat cutlet for meat eaters! Pljeskavica is a very appetizing round-shaped meat cutlet. It is prepared exclusively from meat, onions and spices. There shouldnʼt be anything else in it. It is cooked either on a grill grate or, in the absence of one, simply in a hot frying pan. This dish is very popular among meat eaters. Try cooking it too! Ingredients (4 portions)

Basic:

Onion 400 g
Olive oil 100 g
Salt to taste
Ground red pepper to taste
Minced pork beef 800 g
Mineral water 100 ml

To prepare this dish, you can take ready-made minced meat from a mixture of pork and beef. Or you can cook it yourself. To do this, cut pieces of pork and beef, approximately the same size, into pieces and pass through a meat grinder.

Add salt and ground red pepper (hot) to the prepared minced meat. Mix everything very well so that the spices are evenly distributed in the meat.

Then pour mineral, carbonated water into the minced meat. Thanks to its presence, the finished dish will be very juicy. Mix everything until smooth. Compact it in the bowl and press down with something. You can cover it with a plate and put a jar of water on top. In this compressed form, put the bowl in the refrigerator for a day.

After a day, prepare the onions for the meat. To do this, clean it and rinse it in cold water. Chop the onion, trying to make it as small as possible.

Add finely chopped onion to the marinated meat.

Mix everything very well. Then beat the finished minced meat into a bowl. To do this, simply lift it with your hands and throw it on the bottom of the bowl. Thanks to this procedure, the minced meat will become compacted and more flexible, so it will not fall apart when frying.

To form the meat patties, coat your hands with olive oil, pinch off some of the meat mixture and form into small round patties, approximately 10-13 cm in diameter. Fry them in hot oil over medium heat for a couple of minutes.

Then turn over and fry on the other side until golden brown. During frying, press them down with a spatula and check what juice is released so as not to miss the desired degree of readiness. Serve pljeskavica with a side dish of potatoes or pasta. Also serve with fresh vegetables. You can make additional garlic sauce. Bon appetit!
