Garlic 2 clove
Ground black pepper to taste
Water 150 ml
Potato 300 g
Bay leaf 1 pc
Tomato paste 2 tbsp
Vegetable oil 1 tbsp
Pork 500 g
Salted cucumbers 3 pc
Brine 100 ml

How to make pork basics with pickles and potatoes in a frying pan? Prepare your ingredients. For this recipe, it doesn’t matter which part of the carcass you choose, since it will still become soft during the cooking process. Cucumbers salted using the barrel method will be tastier in this dish, but, if not available, pickled ones will also work. Tomato paste can be replaced with chopped fresh tomatoes, you can also add carrots and onions.

Pour the cucumber brine over the tomato paste and stir until smooth. If you took fresh tomatoes, then grate them on a coarse grater, and only then fill them with brine.

If the pork has been frozen, first defrost it by transferring it from the freezer to the bottom shelf of the refrigerator. Wash the defrosted meat and dry it with paper towels. Cut the pulp into small cubes.

Wash the potatoes, peel them and cut them into cubes approximately equal in size to the pork.

In the same way, cut the cucumbers into cubes.

Heat the vegetable oil in a frying pan over medium heat and, stirring, fry the pork until golden brown.

Place potatoes in the pan with the meat. Fry everything together, stirring, for about 5 minutes.

Add pickles to the pan. Stir.

Then pour the tomato mixture with brine and water into the pan with the meat and vegetables. Add bay leaf and ground pepper.

Mix everything thoroughly. Cover the pan with a lid and simmer the azu over low heat for 20-25 minutes.

At the very end, add the peeled garlic passed through a press. It is not necessary to add salt to this dish, since there is already enough salt in the tomato paste, brine and cucumbers. In any case, taste it for salt and decide for yourself. Stir the azu and remove from the heat.
