Water 80 ml
Pork (pulp (ham, shoulder, neck) 1 kg
Dry spices (for meat) 2 tbsp

How to make a tasty and juicy kebab in the oven on an onion bed? Very simple. To begin, prepare the necessary ingredients according to the list. Take pork without bone. Choose the fat content of the meat according to your taste. Neck, shoulder blade, ham will do. If you have large onions like me, two are enough.

Wash the pork, dry it and cut into portions. Place meat in a bowl. Add meat spices, pepper and salt (if salt is already included in the spice mixture, then there is no need to add it additionally). Pour in 1 tbsp. l. vinegar and lemon juice. Mix everything thoroughly.

Cover the bowl of meat with cling film and refrigerate overnight. If it is not possible to marinate the meat for a long time, 2-3 hours is enough.

Peel the onions and cut into rings.

Place the onion in a bowl, pour in the water, the remaining vinegar, and add sugar. Mix well and leave to marinate for 1 hour.

Place all the pickled onions in the baking sleeve.

Spread the pork over the onions. Tie the sleeve on both sides so that the juice does not leak out. Make three small punctures on top with a knife to allow steam to escape.

Place the sleeve with meat on a baking sheet and place in an oven preheated to 200°C for 40-50 minutes. It is very important to focus on your oven and the size of the pieces. Because different ovens may require more or less baking time. For some, the meat will not be cooked through in the specified time, while for others, it will dry out. After 30 minutes from the start of baking, check the meat for doneness. The larger the pieces, the longer they bake.

Then remove the pan from the oven, cut the sleeve at the top, pour the juices over the meat and return to the oven for about another 20-25 minutes or less. It is important not to dry out the meat, so if you see that the pork is already ready, you don’t have to bake it in the open sleeve. Bon appetit!
