Basic:

Salt to taste
Ground black pepper 1 tsp
Ground coriander 1 tsp
Ginger (ground) 1 tsp
Bulb onions 2 pc
Paprika 1 tsp
Lemons 1 pc
Beer (necessarily unfiltered, preferably goat) 1 l
Pork neck 2 kg

For barbecue according to this recipe, which I learned in a Czech village, you need fresh pork neck. Use the following spices for the marinade: ginger, black pepper, paprika, coriander. And also 2 onions and a lemon. And definitely unfiltered beer. I always take Kozel beer, as I was advised.

Cut the meat into pieces — the way you like them.

Cut onion and lemon into rings. Add spices, onions, lemon to the meat and pour beer over everything. Mix thoroughly and place in the refrigerator to marinate for one hour.

Once the kebab is marinated, light the coals in the grill or on the fire.

And while the coals are burning, string the meat, onions and lemon onto skewers.

As soon as the coals flare up, place the kebab on them.
