Recipe instructions

Step 1

Step 1
How to make lula kebab in the oven on skewers? Prepare all the necessary ingredients. If you buy ready-made minced meat, like I do, buy high-quality minced meat without additives. But itʼs better to do it yourself. You can use any herbs and spices that you have on hand or that you like best in combination with meat. I took parsley and suneli hops. Wine can be replaced with cherry or grape juice.

Step 2

Step 2
To cook in the oven, you will need skewers and a heat-resistant pan. Select the form in advance, making sure that you can place skewers with minced meat on it as in the photo of step 7. Take skewers at least 20 cm long. If they are very thin (2-3 mm in diameter), you can take several pieces for one kebab.. This way the meat will hold on more firmly. To prevent them from burning when baking, cover them with cold water and leave for about an hour.

Step 3

Step 3
Transfer the minced meat into a deep bowl, in which it will be convenient to mix the minced meat with the rest of the ingredients. Peel the onion and garlic, rinse. Remove hard stems and limp leaves from the greens, rinse and dry. Chop the onion, garlic and herbs with a knife. Add onion, garlic, herbs, salt, spices and soy sauce to the minced meat.

Step 4

Step 4
Knead the minced meat thoroughly until smooth. It is more convenient to do this by hand.

Step 5

Step 5
To make the minced meat more homogeneous, elastic and not fall apart during cooking, beat it. To do this, place it on the work surface, lift it in your hands above the table by approximately 20 cm and throw it back with force. If the minced meat is sticky, the surface can be slightly moistened with water. It took me about 20 throws. Then place the mince in the refrigerator for 30-50 minutes to cool.

Step 6

Step 6
After cooling, the minced meat will become denser and easier to work with. Remove the skewers from the water. Divide the minced meat into 6 equal parts and form lula kebab. To do this, take skewers and wrap the minced meat around them, gently pressing it with your palm.

Step 7

Step 7
Pour the wine and water into an ovenproof dish. Place lula kebab on it so that there is a small distance between them. Bake on the middle shelf of an oven preheated to 200 degrees for about 15 minutes. Then turn the skewers over to the other side and leave for another 15 minutes. Determine the exact time and temperature based on your oven.
