Soy-Glazed Pork with Wild Mushrooms

Basic:

Vegetable oil 4 tbsp
Pork 400 g
Dry spices to taste
Mushrooms 500 g
Greenery to taste
Sesame 1 tsp
Starch 1 tsp
Soy sauce 3 tbsp
Brown sugar 1 tsp

How to fry pork with mushrooms in soy sauce? Prepare all the products indicated on the list. What mushrooms are best to use? Fresh mushrooms collected from the forest or frozen are good. I used frozen Polish mushrooms that I collected in the forest in the fall.

Place the mushrooms in a saucepan and cover with cold water. Place over high heat, after boiling, skim off the white foam, reduce the flame and simmer for about 30 minutes. Place the boiled mushrooms in a colander and leave it that way for a while to remove as much liquid as possible. If necessary, lightly squeeze the slightly cooled mushrooms.

At this time, rinse the pork and dry it with napkins. Cut the meat into equal small pieces.

Heat vegetable oil in a frying pan. Place the meat in the frying pan. Fry, stirring occasionally. After 2-3 minutes, juice from the meat will form in the frying pan; at this point, reduce the stove flame to moderate. Simmer in this way without a lid for 5 minutes, then turn the flame to maximum. The juice in the pan should all boil away, and the pieces of meat should be covered with an appetizing golden brown crust.

Add mushrooms to the meat. Fry everything together over medium-low heat for about 15 minutes. During the frying process, I covered the frying pan with a lid for 5-7 minutes. Donʼt forget to stir everything sometimes so that nothing burns.

Add brown sugar and starch to soy sauce. Stir everything until the sugar is completely dissolved.

Increase the flame under the frying pan, add spices to the meat and mushrooms to taste (I used a pinch of ground coriander, a little ground ginger and dry garlic). Stir.

Pour in soy sauce and continuously stir the contents of the pan.

Stir and cook until the sauce thickens and coats each piece. Taste and add salt if necessary. Sprinkle the finished dish with sesame seeds.

When serving, offer fresh herbs to each personʼs plate. Dill and green onions are great.
