Fresh pork, it is better to take tenderloin, rinse thoroughly, dry with paper towels and cut into small steaks, about 2 centimeters thick, the main thing is that the pieces are the same size and thickness. Place the meat in a deep bowl.

Make the marinade. Add spices to taste into a bowl: ground black pepper, salt, suneli hops, ground coriander, paprika, pour in fat kefir. Mix the ingredients thoroughly so that the salt dissolves and the spices are mixed evenly in the kefir. Kefir, thanks to the lactic acid it contains, will soften the meat fibers well.

Pour the marinade into a deep bowl with meat. Mix the contents of the bowl thoroughly with your hands so that all pieces of meat are evenly coated with the spices and marinade. Cover the bowl with a lid or cover with cling film and put it in the refrigerator for 3-4 hours to marinate the meat.

After the specified time, the meat must be mixed again in the marinade. In the meantime, you need to prepare the grill and light the fire. If there is no barbecue, it is enough to have a grill; you can make a barbecue yourself from several bricks. Check that the grill is well heated; if it is very hot, you can proceed to frying the meat.

Place the pieces of meat on the grill, leaving space between them. Fry the meat, periodically turning the pieces so that it does not start to burn; if necessary, you can sprinkle the meat with water.

5-8 minutes on each side is enough to grill steaks over charcoal. The readiness of the meat can be checked using the tip of a sharp knife or by taste. The meat should be soft, juicy and tender. The juice should be clear, without blood.
