How to bake bread in a tandoor? First of all, prepare the dough. To do this, measure the required amount of products indicated in the recipe. You may need a little more flour or, conversely, less flour than indicated in the recipe. Instead of water, you can use milk if desired.

Sift the flour through a sieve. This will saturate it with oxygen and your baked goods will turn out airy and soft. Place the flour in a deep bowl or any other container.

Make a hole in the middle. Add yeast and sugar. Stir lightly.

Next, add salt and vegetable oil. Stir a little again.

Start gradually pouring warm water and knead the dough. The amount of water or flour may differ from what is indicated in the recipe.

Focus on the consistency of the dough. It should be tight, but at the same time not too dense. Knead the dough for 10 minutes.

Grease the bowl with vegetable oil, place a ball of dough and grease it with oil on top. To rise the dough, I often use a plastic cup, as it seems to me that the dough rises faster in it than in a glass or metal bowl.

Cover the dough with a towel and leave it like that for 30-40 minutes.

At this time, fire up the tandoor.

While the firewood is burning, our dough will usually be ready for further use.

Lightly knead the risen dough with your hands. Form balls of approximately the same size. Cover with a towel and leave for another 10-15 minutes. During this time, the cones will rise slightly again.

Use your fingers dipped in water to make an indentation in the center of each ball, forming a patty. Make several punctures inside the recesses with a fork.

When the wood in the tandoor burns out and the walls of the oven turn white again, you can begin the final stage of cooking.

Brush the bottom of each flatbread with salted cold water. Place the flatbreads on the walls of the tandoor. Be extremely careful not to burn yourself and use special heat-resistant mittens. Close the vent from below and cover the stove with a lid from above.

Flatbreads are cooked very quickly in the tandoor, the time depends on the degree of heat and the size of the bread products. This is what my flatbreads looked like after 2 minutes of cooking.

This is what the finished bread looked like after 5 minutes of baking in the oven. On average, cooking time varies from 4 to 10 minutes. Carefully remove the finished bread from the tandoor.
