Cocoa 50 g

How to make Walnut cake with walnuts? First, prepare the necessary ingredients. Take the highest grade flour. The butter and eggs should be at room temperature, so remove them from the refrigerator in advance. Sour cream should not be watery, with a fat content of 15-20%. Instead of cane sugar, you can use regular white sugar.

In a bowl, combine the egg and sugar and mix with a whisk. You can leave the mixture for 10 minutes so that the sugar is completely dissolved.

Add sour cream and soft butter and mix again.

Gradually add the flour sifted with baking powder and salt.

Knead into a soft, elastic, non-sticky dough. If necessary, adjust the amount of flour up or down. Look at the consistency.

Roll the dough into small balls the size of a walnut or slightly smaller.

Place the resulting balls on a parchment-lined baking sheet. Place the baking sheet in an oven preheated to 180°C and bake the cookies for 15-20 minutes until golden brown. The balls should remain soft.

Now prepare the cream. Take high-quality cocoa, for example, Golden Label. Low-quality cocoa can crunch on your teeth. Instead of cane sugar, you can use regular white sugar. Large, selected eggs are needed. If the eggs are small, take 3 pieces.

In a bowl, combine eggs and sugar and stir until smooth.

Add the sifted flour and cocoa and mix with a whisk until smooth.

While stirring constantly, pour in milk at room temperature.

Pour the mixture into a saucepan and place on low heat. Cook the cream, stirring continuously, until thickened. When the cream thickens, remove the saucepan from the heat.

Add butter to chocolate custard and stir until smooth. Cool the cream slightly. It should be warm. Hot cream can greatly soak previously baked cookies and they will lose their shape.
