Cherry Sour Cream Delight Cake

Ingredients (12 portions)

For the cakes:

Chicken eggs 5 pc
Sour cream 220 g
Wheat flour 300 g
Sugar 250 g
Butter 100 g
Cocoa 2 tbsp
Soda 2 tsp

For cream:

Sour cream 700 g
Cherry 500 g
Sugar 200 g

For decoration:

Walnuts 100 g
Chocolate 50 g

Products for making cakes. I first cut the butter into pieces and put it in a small saucepan, heated it over low heat, stirring until it was almost completely dissolved. Removed the saucepan from the heat and left to cool. I sifted the flour and cocoa powder beforehand.

Place the eggs in a bowl and start beating with a mixer.

Gradually add sugar in a thin stream and beat at high speed for 5 minutes.

You should get a fluffy egg mass.

In a saucepan, combine sour cream and cooled butter, stir with a whisk until smooth.

Quench the soda with vinegar and add to the sour cream mixture, mixing thoroughly.

Beating the egg mass with a mixer, pour in the sour cream mass and mix until smooth.

Add sifted flour to the resulting mass, continue whisking and obtain a homogeneous dough.

Divide the dough into two equal parts, add cocoa powder to one of them and mix until the color is even. Add a couple of tablespoons of flour to the light dough and stir.

Prepare 2 molds of the same diameter: grease each with a piece of butter, sprinkle with flour or breadcrumbs, or cover with parchment paper. We send the forms to an oven preheated to 180/200 degrees. Bake white and chocolate biscuits for about 30 minutes. until ready. After the specified time, take out the molds and cover them with light towels, leave for 20 minutes. Remove the towels, remove the biscuits onto a wire rack and leave to cool.

Place the sour cream (it should be fatty and thick) in a bowl and add sugar to it. Beat the sour cream until smooth and the sugar is completely dissolved at low speed.

We cut the cooled biscuits lengthwise into two equal parts, we get 4 cake layers. Place the first chocolate cake on a wide dish, grease it with sour cream. On top we place a layer of pre-washed, pitted and drained cherries from excess juice in a colander, cover them with cream. Cover the top with light crust. Repeat the layers in the same order: sour cream-cherry cream. Cover with another chocolate cake and add the filling: sour cream, cherry cream.

Cover the cake with the last light cake layer on top and grease it with the remaining sour cream. We also grease the sides of the cake with cream and sprinkle with pre-chopped, lightly roasted walnuts.

Sour cream cake with cherries should be left in the refrigerator for at least 6 hours to soak. After the specified time, decorate the surface of the cake with melted chocolate (I also added marmalade) and leave it in the refrigerator for 10 minutes so that the chocolate on the cake hardens. Take the sour cream cake with cherries out of the refrigerator, cut it up and enjoy! Bon appetit!
