Recipe instructions

Step 1

Step 1
How to bake a delicious, tender, airy cake in the oven? Very simple! To begin, prepare the necessary ingredients according to the list. For the test, all products must be at room temperature. Take kefir with a fat content of 2.5% or higher. Vegetable oil — any, I use sunflower oil.

Step 2

Step 2
Finely chop the walnuts.

Step 3

Step 3
Rinse the raisins and remove the stems. If the raisins are very dry, pour boiling water over them and leave for 10 minutes, then drain the water and dry the raisins.

Step 4

Step 4
Beat the eggs with sugar into a fluffy foam.

Step 5

Step 5
Continuing to beat, pour in room temperature kefir and vegetable oil.

Step 6

Step 6
Add the sifted flour with baking powder and stir until smooth. Donʼt rush to add all the flour at once. Focus primarily on consistency. You should get a thick, flowing dough.

Step 7

Step 7
Stir raisins and nuts into the dough.

Step 8

Step 8
Pour the batter into a greased cake pan. You get a lot of dough, plus streusel, so choose a form that can accommodate everything. The internal size of my rectangular mold is 22 by 10 cm. The diameter of the round mold is 20-22 cm.

Step 9

Step 9
Now prepare the necessary ingredients for the streusel.

Step 10

Step 10
Place cold butter cut into cubes into a blender bowl, add flour, sugar and cocoa. Beat until fine crumbs are obtained. You can beat everything not in a blender, but grind it with your hands, but it’s much faster in a blender.

Step 11

Step 11
Spread the chocolate streusel evenly over the top of the dough. Place the cake in an oven preheated to 180°C for 45-50 minutes. The exact baking time depends on your oven and the thickness of the dough. Check the readiness of the cake with a skewer — it should come out dry. Remove the finished cake from the oven and leave to cool in the pan.

Step 12

Step 12
Then transfer the cake to a plate, cut into pieces and serve. Bon appetit!
