Sugar (plus a little for sprinkling) 3 tbsp
Vanillin to taste
Eggs 1 pc
Egg yolks 1 pc
Puff pastry 500 g

How to make envelopes from puff pastry with cottage cheese? Prepare the necessary ingredients for this. If you are using store-bought puff pastry, remove it from the freezer in advance to allow it to thaw.

For the filling, combine cottage cheese, sugar, egg and a pinch of vanillin. Stir. There is no need to beat the curd filling, otherwise it will become liquid. If the cottage cheese is very wet, you can add a little starch to the filling. If desired, you can add some raisins or dried apricots.

Roll out the puff pastry a little and cut into squares.

Place 1-2 tablespoons of curd filling in the center of each piece of dough. Bring the corners of the dough together in the center and pinch.

Cover a baking tray with baking parchment and lay out the prepared envelopes with cottage cheese. Brush the top of each envelope with egg yolk and sprinkle with a little sugar. Place the baking sheet in the oven, preheated to 180 degrees, for 25-35 minutes. When baking, use your oven as a guide.
