Letʼs prepare the ingredients according to the list. Letʼs start by boiling mashed potatoes. Wash the potatoes, peel and cut into pieces. Place in an enamel pan, fill with water, and put on fire. Add a pinch of salt and cook until the potatoes are soft.

Check the readiness of the potatoes with a fork or knife. When the potatoes begin to crumble, turn off the heat. Drain the water, mash the potatoes into a puree, pour in the milk and add a piece of butter. Mix. Potato filling for kystyby is ready. This dish can be prepared with leftover mashed potatoes from lunch or dinner, but the mashed potatoes should not be bland and gray.

While the puree is cooling (but by the time the kystybya is prepared, the puree should be warm, but not hot), we will make the dough for the flatbreads. Sift wheat flour into a deep bowl. Flour must be sifted in order to saturate the product with oxygen and remove foreign impurities from the flour.

Pour warm milk and melted butter, cooled to room temperature, into a bowl with flour, beat in a chicken egg. Add salt, sugar and soda, slaked with table vinegar.

Letʼs move on to preparing the flatbreads. Divide the dough into pieces the size of a tangerine. Roll out each piece into a flat cake with a diameter of about 15 centimeters. But you need to consider the size of the pan in which the flatbreads will be fried.

Fry the flatbreads in a dry frying pan with a thick bottom. Fry the tortillas for 3-4 minutes over medium heat on each side.

Remove the flatbreads from the frying pan, immediately grease each of them with melted butter and fill them with potato filling, bend them into two parts, but do not fasten the edges tightly. Serve kystyby to the table. Bon appetit!
