Crab Stick Stuffed Tartlets

A tasty and beautiful appetizer will decorate any holiday table! Tartlets with various fillings are another way to diversify the holiday menu. This recipe suggests a filling with crab sticks, but not with the usual crab salad. Here is a more original salad with other ingredients. The tartlets themselves are made from shortcrust pastry based on sour cream. This dough is good because it does not get soggy when filling the tartlets with a juicy filling. This dough is suitable for a salad with crab sticks, pickled cucumbers and hard cheese. Try these tartlets. I hope that their taste will not disappoint you! The ingredients for the dough indicated in this recipe make about 50-60 tartlets. There will be enough filling for about half of the products (plus/minus). I usually bake 2 times more tartlets than I need for the feast. And then for the remaining preparations the next day or a little later I prepare fresh filling and fill the tartlets with it. The family is happy and the celebration continues.

For tartlets:

Products for preparing dough for tartlets. The flour must be sifted first. The butter or margarine must be from the refrigerator.

Beat eggs into a bowl with flour, add sour cream, stir thoroughly.

Then add oil, salt, ground black pepper and knead the dough until smooth.

The finished dough can be easily rolled into a ball. Cover the dough with cling film and put it in the refrigerator for 40 minutes.

While the dough is ripening in the refrigerator, we prepare the ingredients for the filling. Boil the eggs hard and remove the shells. Defrost the crab sticks and remove the plastic wrap. We sort through the greens, wash them, and shake off the water. Peel the garlic and wash it.

Chop crab sticks and boiled eggs into small cubes. Cut 1-2 sticks in half lengthwise, and then into strips diagonally and set aside to decorate the finished tartlets.

Chop the dill and a little parsley, leaving a couple of sprigs for decoration. If the cucumber has a hard skin, peel it off. Cut the cucumber into small cubes, squeeze out the juice and drain it; we don’t need it in the salad.

Grate the cheese on a fine grater.

Prepare the dressing for the filling. Squeeze the garlic through a press into a cup of mayonnaise (cream or sour cream), add just a little salt (you can do without it, since mayonnaise is already salty, crab sticks and cucumbers too), add freshly ground black pepper and chopped herbs .

In a deep plate, mix all the prepared ingredients. Letʼs taste it. We made a delicious salad. This is what we will use to fill the tartlets. Place the salad in the refrigerator for now.

After 40 minutes, take the dough out of the refrigerator and divide it into several pieces. We roll out each piece into a layer 0.2-0.3 cm thick. We select a small saucer (lid, glass), with a diameter slightly larger than the diameter of the molds in which we will bake the tartlets. We cut out circles of the same size for the stencil. Preheat the oven to 200 degrees.

Place each circle of dough into a mold and press the dough along the bottom and sides of the mold. Place the molds on a baking sheet and place in the oven to bake for 18-20 minutes at 200°C until golden brown. Let cool.

Remove the finished tartlets from the molds. Here they are about half of the total.

We take the prepared salad out of the refrigerator and fill the tartlets with it. Decorate with greens and specially left strips of crab sticks. Place tartlets filled with crab sticks on a large platter or tray. We treat guests and family!
