Basic:

Sugar 50 g
Egg yolks 3 pc
Vanilla sugar 1 tsp
Dessert wine 120 ml

How to make Sabayon? Letʼs prepare the ingredients. To prepare the Sabayon cream, we need egg yolks, regular and vanilla sugar, and wine.

In a heatproof bowl, lightly beat the egg yolks.

Next, add regular granulated sugar and vanilla sugar to the yolks.

Stir thoroughly with a whisk for 1 minute. There is no need to beat the mixture until fluffy.

Pour in the wine and mix thoroughly again.

You will need to cook the cream in a steam bath. Therefore, we take a saucepan with a slightly larger diameter than our container with cream, pour some water into the saucepan and bring it to a boil. Place a bowl of cream on top of the saucepan. Please note that the bottom of the bowl with cream should not touch the boiling water! By the way, if you use a glass container to cook the cream, be careful and do not turn on high heat, otherwise the bowl may crack from the high temperature!

Warm the cream in a water bath for 7-10 minutes, while thoroughly whisking the cream with a whisk or mixer. During cooking, the cream should turn into a fluffy and thick foam.

Pour our cream into glasses or bowls and leave until completely cool.
