Wheat flour 200 g
Eggs 1 pc
Vegetable oil (+ oil for frying) 2 tbsp
Dry yeast 7 g
Spoiled milk 250 ml

How to make fluffy pancakes from sour milk with yeast? Prepare your food. They should all be at the same room temperature — then the dough will rise better and faster. Take refined, odorless oil. You may need more or less flour than the specified amount, depending on the dough. Instead of dry yeast, you can use fresh yeast; you will need three times more of it.

Warm the milk slightly in the microwave until it becomes pleasantly warm. Donʼt overdo it or the milk will curdle. Pour it into a deep bowl. Add yeast and half the sugar to the milk. Mix with a whisk and leave to stand on the counter for 15 minutes.

During this time, the mass should bubble and grow in volume — this means that the yeast is active and ready to work. If this does not happen, start again by replacing the yeast.

Sift flour into a bowl, 2/3 of the total amount. Add the remaining sugar, salt, and vegetable oil. Beat in the egg.

Stir the dough until smooth, it should become thick, but still fluid. If necessary, add flour or, if the dough is very thick, milk.

Cover the bowl with a towel or cling film and leave in a warm place for 1 hour. During this time, it will increase in volume two to three times.

Heat a heavy-bottomed frying pan over high heat. Pour vegetable oil on it for frying. It should cover the entire bottom — it is in a large amount of oil that the pancakes will rise well. Spoon the batter into the pan, forming pancakes. Do not stir the dough so that it does not fall.

Fry the pancakes on one side for 2-3 minutes, until golden brown. Then turn it over to another and also fry until done.

Remove the finished pancakes to a plate. Add some oil to the pan again. Place the next portion of dough and fry the pancakes in the same way. I got 12 medium sized pancakes in total.
