Ingredients (8 portions)

For the test::

Salt 1 g
Sugar 100 g
Wheat flour 2 tbsp
Vanillin 2 g
Cocoa 2 tbsp
Baking powder 1 tsp
Chicken eggs 4 pc
Potato starch 2 tbsp
Dark chocolate 50 g

For the curd balls::

Sugar 50 g
Cottage cheese 200 g
coconut flakes 40 g
Quail eggs 2 pc
Potato starch 2 tbsp

To lubricate the mold::

Butter 1 tbsp

Prepare ingredients for curd balls.

I used store-bought cottage cheese, so I simply mashed the cottage cheese with a fork (if you have homemade cottage cheese, rub it through a sieve). Add sugar.

Beat in the eggs (you can replace the quail eggs with two chicken yolks).

Add coconut flakes

and starch.

Stir.

Roll the resulting curd mass into balls of the same size. Line a cake pan with parchment and grease it with butter. Place the curd balls evenly in the pan.

Do the test. Separate the egg yolks from the whites.

Set aside the whites. Add half the sugar to the yolks.

Beat with a mixer until foam forms and add vanillin. Melt the chocolate in a way convenient for you (steamed, in the microwave), cool slightly. Add to the yolks.

Add the remaining sugar to the whites.

Mix both masses and mix gently.

Add cocoa, sifted flour, salt and baking powder.

Stir. The dough is ready.

Pour the finished dough into the mold on top of the curd balls.

Place in a preheated oven and cook for 40 minutes at 180 degrees. Remove the finished cake from the oven and cool in the pan.
