Streusel:

Sugar 60 g
Butter 50 g
Wheat flour 80 g
Vanilla sugar 8 g

Glaze:

Water 5 tsp
Powdered sugar 90 g

Filling:

Sugar 3 tbsp
Butter 50 g
Apples 400 g
Lemon zest 1 tbsp
Starch 1 tbsp

Crumble the yeast into warm water and add 1 tsp. sugar — stir and set aside for 15 minutes, until a “cap” appears. When the dough rises, add the egg, salt, and sugar.
