Ingredients (4 portions)

For dough:

Chicken eggs 1 pc
Water 0.5 cup
Vegetable oil 3 tbsp
Salt 0.5 tsp
Wheat flour 2.5 cup

For filling:

Minced meat 500 g
Bulb onions 2 pc
Salt 1 tsp
Ground black pepper to taste
Butter 50 g

How to cook khanum with minced meat? Itʼs not difficult at all. First, prepare all the necessary ingredients for the dough.

Beat an egg into a bowl, pour in water, vegetable oil and add salt. To prepare the dough, it is better to use filtered or bottled water, as it has a neutral taste. Stir everything thoroughly.

Always try to sift the flour. This procedure will saturate the flour with oxygen and make the dough softer and more elastic. Add the sifted flour to the egg mixture and knead the dough. You may need more or less flour than indicated in the recipe. This may depend on many factors. Therefore, focus on the consistency of the dough. The dough should be elastic. Divide the resulting dough into two parts, roll into tight balls and place in the refrigerator for 30 minutes. During this time, gluten will develop in the flour, and the dough will turn out even more elastic and pliable.

Meanwhile, make the filling. Traditionally, minced beef or lamb is used for khanum. I used homemade minced pork and beef. You can use any minced meat you like.

Peel the onion and chop finely.

Place minced meat, chopped onion, salt and pepper in a bowl. Mix everything thoroughly.

Remove one ball of dough from the refrigerator and roll it out to a thickness of no more than 2 mm.

Stepping back a little from the edges, spread half of the prepared filling evenly. Spread butter on top in small pieces to make the dish juicy. You can pour melted butter over the finished dish. Focus on your preferences.

Roll the dough and filling into a tight roll.

Carefully pinch the edges so that the roll does not fall apart during cooking.

Pour water into the steamer and place on fire. Place the roll in a buttered steamer, seam side down. As soon as the water boils, reduce the heat and cook for about 40 minutes over medium heat with the lid tightly closed. You can also use a double boiler or multicooker with a special steam grate (select the mode according to the instructions for use for your device). You can even build a steamer from a saucepan and a colander.
