Basic:

Wheat flour 2 cup
Salt 2 g
Butter 10 g
Water 180 ml
Bulb onions (two medium sized onions) 2 pc
Vegetable oil 4 tbsp

How to make fatir? Prepare the ingredients, since there are only a few of them. We only need butter to lubricate semi-finished dough products. Take the highest grade flour. Water — bottled or filtered, at room temperature.

Chop the peeled, washed and dried onions into thin half rings. Lightly salt the onion and crush it with your hands. To prevent the smell from transferring to your hands, do this with gloves.

Sift the wheat flour in a separate bowl. Add salt to it, pour in 2 tablespoons of vegetable oil and water. Knead elastic dough. The consistency should be like dumplings. Keep in mind that you may need more or less flour than I did!

Roll the dough into a ball, wrap it in cling film and put it in the refrigerator for half an hour.

Divide the chilled dough into three equal parts.

Lubricate the work surface of the table and the rolling pin with vegetable oil. Roll each piece of dough into a very thin rectangular layer. The dough should literally shine through, but you need to be very careful not to tear it.

Place part of the onion on the edge of the dough layer as shown in the photo.

Wrap the dough into a thin, long roll.

Roll the strip of dough with filling into a snail as shown in the photo. Leave each snail on the table for 10 minutes, covering them with cling film so that the dough does not dry out.

Preheat the oven to 250 degrees. Grease a baking sheet with vegetable oil. Place the snails on a baking sheet. Using oiled hands, carefully stretch them into thin cakes. Brush the tops of the flatbreads with melted butter and prick them with a fork. If you added a little salt to the dough, you can also add coarse salt to the flatbreads.

Bake the cakes until golden brown. I don’t write how long it will take, because it only depends on the characteristics of your oven. Follow the process. Remove the fatiras from the oven, lightly spray them with water and cover with a towel. Leave them like this for 15-20 minutes. During this time they will become soft.
