Recipe instructions

Step 1

Step 1
How to make sour cream and honey cake? Prepare your food. First to prepare the cakes. Take natural honey, it is better if it is liquid. If you only have candied and thick, then melt it in a water bath. Remove the butter from the refrigerator in advance; it should become soft.

Step 2

Step 2
How to make cakes? We will prepare the dough for them using the custard method. In a suitable saucepan, whisk the eggs and sugar until smooth.

Step 3

Step 3
Add soft butter, stir.

Step 4

Step 4
Place the saucepan over low heat. Add honey to the sweet egg-butter mixture.

Step 5

Step 5
Constantly stirring the mixture, boil the mixture until the butter and honey are completely dissolved.

Step 6

Step 6
Then add slaked soda (you can quench it with vinegar or lemon juice). Mix everything well. The mass will begin to foam and increase slightly in volume. Stirring constantly, keep the mixture on the stove for another 1-2 minutes, then remove. Let the mixture cool slightly.

Step 7

Step 7
Add the sifted flour in portions, kneading the dough with a spatula. You may need a little less or more flour, depending on its quality. The dough should be soft, it will remain a little sticky, thatʼs how it should be.

Step 8

Step 8
Roll it into a sausage, then divide it into 9 parts.

Step 9

Step 9
Letʼs start rolling out the honey cakes. Sprinkle your work surface with flour. Roll out the cake very thin (about 3-4 mm thick). You don’t need to level the cake right away; you’ll do it after baking. Using a rolling pin, transfer the cake onto a baking sheet greased with vegetable oil.

Step 10

Step 10
Bake the cake in an oven heated to 170-180 degrees until golden brown. Be careful, the cakes bake very quickly (5-7 minutes). While one cake is baking, roll out the next one in the same way. Thus, the baking process goes quickly. Immediately cut the baked cake into a plate of the required diameter. Do this quickly, as honey cakes tend to harden and become brittle. The trimmings will be used to decorate the cake.

Step 11

Step 11
After cutting, place the cake on a flat surface. Stack the baked cakes one on top of the other.

Step 12

Step 12
Now letʼs prepare the cream. Prepare the ingredients for it. Choose thicker sour cream. To make the sour cream thick, weigh it out in a linen napkin overnight. The excess liquid will drain from it and it will become much thicker. Instead of sugar, you can use powdered sugar; it will dissolve in the cream faster.

Step 13

Step 13
How to make cream for a cake? To prepare the cream, mix sour cream, sugar and vanilla sugar. Let the cream sit at room temperature for a while until the sugar dissolves. There is no need to whip this cream, especially if the sour cream will be thick after weighing.

Step 14

Step 14
All that remains is to assemble the cake. Place the cake on a flat plate and spread generously with cream. Place the next layer on top. And so, coating all the cake layers, assemble the entire cake.

Step 15

Step 15
Coat the top and sides of the cake with cream as well.

Step 16

Step 16
Grind the cake scraps using a rolling pin or blender. Sprinkle the top and sides of the cake with crumbs. Place the finished cake in the refrigerator for 7-8 hours. The best option is to leave the cake overnight, so it will soak well.

Step 17

Step 17
Serve the cake with tea or coffee. Bon appetit!
