How to make pancakes with onions and carrots? Prepare your food. Take large, juicy carrots. You will need one onion, but you can reduce the quantity to taste. It may take more or less flour, everything will depend on the juiciness of the carrots. Read about the properties of flour in the article below the steps. If you find it is not very juicy, you may need a little kefir to thin the dough.

Rinse the carrots well under running water, peel and dry. Grate the carrots on a medium grater. You can, of course, rub it on a coarse one, but then the pancakes will turn out coarser and more textured. They will also take longer to cook. Grated carrots on a very fine grater will turn into puree, you can try cooking it like that. I like the middle grater the most. Alternatively, you can grind the carrots in a blender.

Peel the onion and also grate it. If you are an onion lover, you can cut it into cubes, then it will taste stronger.

Place the grated carrots and onions in a bowl and beat in the egg. Salt and pepper to taste. If children will eat the dish, you may not add pepper to it. Stir the carrot mixture. If it turns out very dry, then pour a little kefir into it, just a little bit, literally a couple of spoons.

Start adding flour to the carrots. First one tablespoon, stir. Then another. The dough should be homogeneous and not fall apart. If it is not like that, then add a little more flour.

Fry the pancakes until golden brown on one side, about 5 minutes, then flip over to the other. Fry them on the other side in the same way. Remove the finished pancakes from the pan. Before the next batch, add a little more oil to it. Fry all the dough in this way. I got 8 pancakes from two medium carrots.
