Recipe instructions

Step 1

Step 1
Prepare all the necessary ingredients. The best variety for peaches is nectarine.

Step 2

Step 2
Sift together the flour, baking powder, vanilla and a pinch of salt into a bowl.

Step 3

Step 3
Peel the peaches and grate them into a puree.

Step 4

Step 4
Prepare a sponge cake. Beat eggs and granulated sugar until sugar is completely dissolved.

Step 5

Step 5
Continuously whisking, add flour in small portions and bring to a homogeneous mass. Then add peach puree and mix thoroughly.

Step 6

Step 6
The dough should have the consistency of thick sour cream.

Step 7

Step 7
Take a mold of the required volume, taking into account the rise of the biscuit. Grease the bottom with oil. Can be lined with baking paper. The edges of the mold should not be greased. The dough will rise more evenly. Pour the dough into the mold and bake at 180°C for at least 35 minutes. As always, check for readiness with a match. First 20 min. The oven must not be opened during baking to avoid settling of the biscuit.

Step 8

Step 8
While the sponge cake is baking, prepare the creams. Whip the cream with sugar.

Step 9

Step 9
Meringue cream, prepared like regular meringue. You need to thoroughly beat the whites with sugar until the mass increases three times. The cream should be fluffy and stable.

Step 10

Step 10
When the biscuit is baked, cool slightly and cut into two layers.

Step 11

Step 11
Place the bottom cake on a baking sheet, soak the cut section with peach syrup or liqueur, grease with butter cream and evenly arrange small pieces of peach.

Step 12

Step 12
The second cream is also soaked in syrup and greased with meringue cream.

Step 13

Step 13
The first cake layer, which is covered with the second cake layer on the sheet. Coat the top of the dough with meringue cream and decorate with peach slices. You can add peach kernels. Place in a preheated and turned off oven to dry the meringue. Or keep it on low heat for 5 minutes.

Step 14

Step 14
It turned out to be a wonderful cake with fresh peaches. Very tasty and aromatic and no less beautiful. There is no shame in serving such baked goods even on a holiday table.

Step 15

Step 15
Carefully cut the finished cake into portions and serve. A wonderful treat for a tea party with family and friends. Bon appetit!
