How to make a honey cake in a water bath? First, prepare the necessary ingredients for the cream. You can use whole eggs instead of yolks. It is advisable to take butter at room temperature or melt it first. The cakes are soft, the cream absorbs medium. If you need a clear layer of cream cake, then it is better to make more cream, for example, based on 400-500 ml of milk.

In a bowl, mash the yolks with sugar. For cooking in a water bath, it is better to take a metal bowl that will not crack due to temperature changes. If you use a glass bowl like I do, you need to heat it up gradually. Do not place directly on a hot pan of boiling water.

Add milk, flour and soft butter. Mix everything until smooth.

Place the bowl of cream in a water bath. Cook the cream, stirring constantly, until thickened. The mark from the whisk should not be delayed. If you have the skill of cooking custard over low heat in a saucepan without a water bath, you can significantly save yourself time and effort.

Remove the finished custard from the heat, cover with cling film “in contact” and cool.

While the cream is cooling, make the cakes. Take the highest grade flour. Adjust the amount of sugar to your taste. Any honey will do. I have buckwheat. Take butter at room temperature, so remove it from the refrigerator in advance. Turn the oven on 180 degrees.

In a bowl, combine eggs, sugar, butter, honey, soda and vodka. Mix everything thoroughly until smooth.

Place the bowl in a water bath and cook the mixture, stirring, until it triples in volume. Remove the bowl from the heat and cool the mixture slightly.

Add the sifted flour little by little. Knead into a soft, homogeneous, slightly sticky dough. It is important not to overwhelm the dough with flour, trying to completely get rid of stickiness.
