How to make a jellied cake with fruit? First of all, prepare the sponge cake. How to make a sponge cake? Beat eggs (room temperature) into a bowl. Beat with a mixer for 10 minutes, gradually adding sugar and increasing speed. The mass should turn white and increase in volume by 3 times.

Pour the sifted flour into the egg mixture and gently fold it into the dough using upward movements using a silicone spatula. The biscuit dough is ready.

Line the bottom of the baking pan with parchment paper and pour the dough into the pan.

Bake the biscuit in the oven at 180 degrees for 25 minutes. My cake turned out to be tall, so I baked it a little longer — I checked the doneness with a toothpick. Remove the finished biscuit from the mold and let it brew for 2 hours.

Wash the strawberries, dry them and cut them lengthwise into 4-6 pieces, depending on size. In addition to strawberries, you can take any fruits and berries at your discretion: bananas, kiwis, cherries, tangerines, etc.

Pour gelatin with cold water and leave to swell for 30 minutes. All this can be done while the dough is in the oven. After time has passed, heat the gelatin in the microwave or on the stove until completely dissolved.

Mix sour cream with sugar. Sour cream is suitable for any fat content, the main thing is that it is natural and tasty. Pour gelatin into sour cream and stir.

Cut the cooled sponge cake into large squares and pour into a bowl. Pour half of the sour cream filling into it, stir.
