Kefir-Fried Sweet Nuts

Delicate, airy, soft and rosy. Delicious! These kefir-based nuts will appeal to lovers of sweet baked goods fried in oil. They are good with both tea and coffee. Fresh nuts are especially tasty. Many people know them under other names — brushwood or verguns.

Dough:

Sugar 3 tbsp
Wheat flour 400 g
Eggs 1 pc
Vegetable oil 2 tbsp
Soda 0.5 tsp
Kefir 250 g

For frying:

Vegetable oil 300 g

Sprinkles:

Powdered sugar 100 g

How to make nuts with kefir? Prepare all the necessary ingredients. Kefir and eggs should be at room temperature, so remove them from the refrigerator in advance. Place all ingredients except flour into a deep bowl.

Mix everything thoroughly with a whisk until smooth.

Sift the flour first to saturate it with oxygen and make it fluffier. Add most of the flour to the bowl with the remaining ingredients and stir. It is better to add flour in parts and knead the dough evenly. Keep in mind that you may need more or less flour. It depends on the properties of the flour itself.

Add the rest of the flour also in parts. Stir the dough with a spoon (and gather it into a ball.

The dough turns out to be quite sticky and you need to be prepared for the fact that you will have to work with exactly this consistency throughout the entire time. The flour that will be used for dust will help with this. It took me about 70-100 grams, you may need a little more or less, depending on the type and quality of flour. Place the dough on a table sprinkled with flour.

Roll the dough into a ball. Lightly flour not only the ball itself, but also the area underneath it. Cover the dough with cling film and leave to rest for 15 minutes.

Divide the dough into several equal parts. I divided it into 3 parts.

Cut each part into small pieces. I made them about 2 centimeters wide and weighing an average of 35 grams. I got 25 pieces in total. Dip each piece in flour.

Stretch each piece into an oval with your hands. The nuts will rise well, so I made the pieces thinner (about 0.2-0.3 centimeters thick). If you want fluffier nuts, then make the ovals thicker. All ovals should be approximately the same size and shape.

Make a small (about 1 centimeter) cut with a knife in the center of each oval. The nuts are formed like this: take one edge of the workpiece and pull it through the cut, as if turning it inside out.

Pour vegetable oil into a small frying pan or round bread baking dish of also small diameter (to reduce oil consumption): it should reach half of the nuts when they rise. I used a frying pan with a bottom diameter of 20 cm and immediately poured 200 ml of oil. Heat the oil well. Place the pieces in the oil. Fry on one side for about 3-4 minutes on the middle burner over medium heat.

Turn the nuts over and fry them until done. It took me about 2-3 more minutes. You can fry them more intensely or make them lighter. Remove the finished nuts and fry the next batch. I added 50 ml of oil twice as it boiled and warmed it up too. Make sure that no liquid gets into the oil, otherwise it will start shooting.

Sprinkle the finished cakes with powdered sugar and serve with tea. Bon appetit!
