Cherry Coffee Crumble Cake

Coffee and cherries are a classic combination in baking and more. Recently I made a butter cake with cherries (https://1000.menu/cooking/36520-vishnevyi-keks). My husband and I liked it so much that he asked to make it again, but with coffee. We both love coffee baked goods. And before the cherry season passed, I decided to immediately fulfill his request. The cake turned out just as crumbly and soft. Coffee gives it not only a beautiful caramel color, but also an incomparable aroma. The intensity of coffee color and taste can be adjusted, for example, take more coffee (2 tablespoons instead of one).

Ingredients (8 portions)

Basic:

Sugar 120 g
Wheat flour 220 g
Butter 80 g
Eggs 3 pc
Baking powder 1 tbsp
Cherry 350 g
Instant coffee 1 tbsp

Prepare the ingredients. To prepare a coffee cake with cherries we will need: ripe cherries, flour, soft butter, eggs, sugar, instant coffee, water (boiling water), baking powder.

Wash the cherries, remove the stems. Remove the seeds. The net weight of pitted cherries should be about 250 g. Drain off the juice that has been released.
