Recipe instructions

Step 1

Step 1
How to make quick khachapuri in a frying pan with kefir? Prepare all the necessary ingredients according to the list. Take 2.5 or 3.5% fat kefir. Remove it from the refrigerator in advance so that it has time to warm up to room temperature. Take cottage cheese in briquettes. If you have coarse-grained cottage cheese, rub it through a sieve or punch it with a blender until smooth. Be sure to sift the flour to saturate it with oxygen.

Step 2

Step 2
In a suitable container, mix the sifted flour, baking soda and salt. Mix well.

Step 3

Step 3
Pour room temperature kefir into the flour mixture. Mix the dough first with a spoon, then with your hand. Since flour differs in its properties, you may need a little more or less of it than indicated in the recipe. Focus on the desired consistency of the dough.

Step 4

Step 4
The dough should be quite thick, dense and sticky.

Step 5

Step 5
Divide the dough into four parts and roll them into little balls. Cover them with a towel or bowl and leave for 15 minutes to allow the flour to release the gluten. Thanks to this, when rocking, the dough will not tear.

Step 6

Step 6
While the dough is resting, prepare everything for the filling. Grate the suluguni on a coarse grater. This type of cheese is a must here. Add the rest to taste. You can take feta cheese, feta, mozzarella.

Step 7

Step 7
In addition to cottage cheese and suluguni, I use hard cheese. It can be anything, the main thing is that it is of high quality and tasty.

Step 8

Step 8
Wash and dry the greens with paper towels. I took green onions, a little parsley and dill. You can use dill alone or replace it with cilantro. Finely chop the greens with a knife.

Step 9

Step 9
Combine all types of cheese in a container: cottage cheese, suluguni, hard cheese. Add chopped herbs and mix everything well. The filling for our khachapuri is ready.

Step 10

Step 10
Divide the cheese filling into equal four parts and form balls from it.

Step 11

Step 11
To prevent the dough from sticking to the work surface, sprinkle it with a little flour. Roll out the first part of the dough into a small flat cake. You should not roll it out too much.

Step 12

Step 12
Place the first cheese ball in the middle of the dough.

Step 13

Step 13
Seal the edges of the dough, carefully wrapping the filling.

Step 14

Step 14
Now roll out the dough thinly into a flat cake approximately 6-8 mm thick. Form the remaining khachapuri pieces in the same way.

Step 15

Step 15
Heat the pan well; there is no need to grease it with anything. Place the first tortilla on the pan. Fry it over moderate heat for 3 minutes on each side, covered.

Step 16

Step 16
Place the finished khachapuri in a mound, immediately greasing their surface with a piece of butter.

Step 17

Step 17
Serve hot khachapuri with your favorite sauce, herbs, and vegetables. But it will be delicious and simple with tea. Bon appetit!
