Strawberry Galette with Rich Curd Dough

A simple strawberry galette. Tender and juicy. The recipe for this biscuit is far from classic. The dough for it is made in butter with the addition of cottage cheese. The biscuit turns out more rich and tender than from unleavened biscuit dough. Curd dough with juicy strawberry filling just melts in your mouth! Any berry is suitable as a filling, or you can choose assorted berries. You can bake one large biscuit from the curd dough, or several mini-galettes.

Ingredients (6 portions)

For dough:

Cottage cheese 100 g
Butter 100 g
Sugar 1 tbsp
Milk 1 tbsp
Vanilla sugar 1 tsp
Baking powder 1 tsp
Salt to taste
Wheat flour 160 g

For filling:

Sugar 30 g
Strawberry 250 g
Starch 1.5 tbsp

To grease the pan:

Vegetable oil 1 tsp

To prepare biscuits from cottage cheese dough with strawberries, you will need the following ingredients: cottage cheese, butter, milk, sugar, salt, strawberries, starch, flour, vanilla sugar, baking powder, vegetable oil.

If you use cottage cheese in grains, it is better to grind it in a blender or rub it through a sieve. The more uniform the consistency of the cottage cheese, the more tender the curd dough will be.

Grind butter at room temperature with salt, sugar, vanilla sugar.

Add cottage cheese, mix.

Add flour sifted with baking powder.

Grind everything until you get coarse crumbs.

Knead a soft, homogeneous dough. Wrap it in cling film and put it in the refrigerator for 30 minutes.

Divide the chilled curd dough into 3 parts.

On a table well sprinkled with flour, roll out each piece of dough into a round cake. I rolled one out immediately on a baking sheet greased with vegetable oil. Roll out the edges of the cakes slightly thinner than the middle.

Sprinkle the center of the cakes, where the filling will be, with starch through a sieve. Wash the strawberries, dry them, remove the sepals. Chop the berries randomly, not too finely. Place the filling in the middle of the dough, not reaching the edge 3-4 cm. If desired, you can add a little sugar to the filling.

We also sprinkle the strawberries with starch on top to prevent the filling from releasing too much juice.

Raise the edges of each flatbread towards the center and place it over the filling slightly overlapping.

Immediately bake the biscuits in an oven preheated to 180 degrees for 25 minutes until golden brown. Baking time depends on the operating characteristics of the oven.
