How to bake fluffy cheesecakes like in kindergarten? Prepare all the necessary ingredients for the cheesecakes. Cottage cheese, of course, should be natural and fresh for children’s menus. Rub it through a sieve or punch it with a blender. This will make the cottage cheese uniform in consistency and remove possible lumps.

Beat a chicken egg into a bowl with cottage cheese. Add sugar and a pinch of salt to balance the flavor. You also need to add a little sugar, firstly, this dish is being prepared for children and it should be healthy, and secondly, sugar melts when heated and weighs down the finished product, and the cheesecakes should be fluffy. Before using, wash the egg in running water and soda, as there may be harmful bacteria on its surface.

Stir the ingredients until the sugar dissolves and the mixture becomes homogeneous. I used an immersion blender for this. Sift the wheat flour; this must be done to saturate it with oxygen, thanks to which the cheesecakes will become more fluffy and airy.

Add sifted flour to the curd mass, knead the dough. You may need less or more flour. This will also depend on the initial moisture content of the curd. Turn the dough out onto a floured surface, roll into a sausage and cut into pieces. Form each piece into a puck.

Roll them in a plate with wheat flour on all sides. Preheat the oven to 200 degrees.

Line a baking tray with baking paper and grease with vegetable oil. Or you can use a baking dish for this, which should also be greased. Place the cheesecakes on a baking sheet, leaving space between them, as the cheesecakes will increase significantly in size during baking. If desired, you can brush the cheesecakes with beaten egg yolk to make them golden brown.

Bake the cheesecakes in the oven for about 25 minutes. It may take more time, be guided by the operation of your oven and the condition of the cheesecakes, they should be slightly browned.
