A quick and easy tea cake! A popular delicacy in Soviet times was the “anthill” cake made from cookies. However, condensed milk was at times in short supply, so some housewives made this cake with sour cream. The taste of this dessert is not inferior to the classic “anthill”.

Letʼs prepare the ingredients according to the list. For such a delicacy, it is better to use shortbread cookies like “coffee”, “tea” or other crumbly ones. To make the dessert acquire a pleasant chocolate flavor, you can use cocoa to prepare the cream, optional walnuts or other additives.

Grind the shortbread cookies into coarse crumbs using a rolling pin or blender.

Preparing the cream for the cake. You can use sour cream of any fat content, but it is better to use thick, always fresh and natural. Place sour cream in a deep bowl, add sugar, beat in a chicken egg, add softened butter. Whisk the ingredients until a homogeneous mixture is obtained. Add a pinch of vanillin to add a pleasant aroma and a couple of tablespoons of cocoa. Stir and place the bowl in a water bath.

Boil the cream until you get a thick cream consistency. Let the cream cool to room temperature. Place crushed shortbread cookies in a bowl with cream.

Let the cake cool and soak in the refrigerator, leaving it in the cold for a couple of hours so that the cream hardens. You can decorate the cake at your discretion, sprinkle with the rest of the crushed cookies, grated milk chocolate, chopped nuts or poppy seeds to imitate ants on an anthill.
