Soviet-Style Wafer Cookies

Delicious cookies from my Soviet childhood. Such cookies in a gas mold used to be made in almost every home. It’s quick and easy to make, you get quite a lot of it, and it always helps out when you want to drink tea with something, but you just don’t feel like going to the store.

They were produced in different diameters and patterns. I remember such designs on the molds as hearts, triangles with holes, and like mine with a double pattern. Now, by the way, you can buy similar molds in stores or on websites on the Internet. True, I don’t know how the new ones will be in quality; previously they were made to last for centuries.

Immediately prepare all the necessary ingredients for making cookies.

Break the eggs into a bowl, add sugar and beat until fluffy. You can do this with a mixer at medium speed or simply by hand using a whisk.

Put a little sour cream in another bowl and add baking soda, mix. The mass will begin to increase, which means the soda has begun to extinguish. Therefore, everything else needs to be done quickly.

Add vegetable oil, remaining sour cream and sour cream with soda to the beaten eggs. Stir until smooth.

Sift the flour into a bowl with the egg mixture through a fine sieve and mix quickly. The dough should turn out like thick sour cream and without lumps. If you scoop it into a spoon and tilt it, the dough should slowly drip off it.

Grease both halves of the cookie pan, close it and place it on the gas stove. Heat the pan thoroughly on both sides over medium heat. Open the top half and place dough in each cell. In my form, I put one teaspoon in each cell and that will be enough. But you look at your form. Cover the dough with the other half and cook the cookies over low heat on both sides until done.

This will take approximately 3 to 4 minutes on each side and it is advisable to turn the pan over a couple of times during this time to ensure even cooking. Then remove the pan from the heat, open it and remove the cookies onto a plate. Reheat the pan on the fire and bake the remaining cookies in several batches. Usually the mold is greased with vegetable oil only once, but it all depends on the quality of your mold.
